prologue:

Mise-en-place. Carrots. (native to Europe and southwestern Asia) Scallions. (edible plants of various Allium species)  Potatoes. (the fourth-largest food crop following: rice, wheat and maize) Onions. (available in three colors: yellow, red, and white) Slowly simmering stock. (made this morning)  Today it's shredded chicken, vegetable, and three bean soup.

The chef picks up a (left-handed Deba blades cost more than the right-handed blades - it takes4 to 6 weeks to forge and deliver) knife.

Slicing medallions of carrots. Gathering them up and tossing them into the pot.

Dicing up scallions. They go in.

(tok - atok - atok)

Cutting potatoes. They're next.

(tok - atok - atok)

Starting to slice oni--

"Ah!

"Ow-- shit. . .

"Goddamn. . ."  He sets down the knife.


(. . . food handlers must take special precautions to protect themselves from contamination)

He scoops them up and dumps them into the pot.
